White Cow Parmigiano is made with raw milk from white cows belonging to the "Bianca Modenese" breed, which is native of the province of Modena, in Emilia Romagna. During the last century, it has been slowly abandoned in favor of breeds producing more milk. Recently, it was re-discovered thanks to the high quality of its milk, which is indeed rich in casein and has a great balance of fats and proteins. The Italian name of this Parmesan is "Parmigiano Vacche Bianche".
In general, Parmigiano or Parmesan is a cheese with a hard consistency, produced in Emilia Romagna. This cheese is the famous and beloved protagonist of all Italian tables. It is made with raw cow’s milk, semi-skimmed by removing the fat on the surface and without additives and preservatives. It is recommended to taste the product on its own, in flakes or pieces, or as an ingredient in many dishes.
